I saw a recipe for a freezable mac-n-cheese that I think I will try. Hope we like it.

ReplyDeleteBAKED RAVIOLI (Lasagnia style-Costco Cookbook)
ReplyDelete2 Tbsp cooking oil
1 29 oz can tomatoe sauce
24 pieces Kirkland 4 chees ravioli
1 Oz grated Romano cheese
14 Oz Kirkland meatballs chopped
5 Oz shredded mozzarella cheese
-Pre-heat oven to 400
-Oil 8zx10 baking pan and spread with 5 ozx of tomatoe sauce.
-Place a layer of 12 ravioli flat sidse up, on the sauce. Spread 12 oz of tomatoe sauce over the ravioli, and then cover with half the romano cheese, half the meatballs and 2 oz of shredded mozzarella. Pat down lightly.
-Repeat procedure, saving 1 oz of mozarrella for the top. Pat down again and cover with tented aluminum foil
-Bake 1 hour or until heated through and mozarella on top is melted. If frozen bake for an additional 15 min. Makes 6-10 servings.
I baked for just over 90 minutes.... put on a cookie sheet to bake unless you like cleaning the oven. :-)

ReplyDeletea note on the shep's pie. if you defrost overnight in the fridge, as per the directions, you will actually probably want to cook it for 60 minutes. i cooked it for 40 last night and it was still cold in the middle. --if you cook it from frozen you will be waiting a looong time (but it'll be worth the wait).
And a note on the macaroni and cheese... I tried a "make-ahead" recipe that warned that the mixture would be "soupy" in order to compensate for the drying-out that happens when you freeze. I filled the pans pretty full, so you will probably want a pan under this one as well.
ReplyDeleteThe cooking instructions say to microwave from frozen for about 10 minutes before baking. This step won't quite work since I used the foil pans, so hopefully it's enough to bake it a long time or let it thaw first.
Let me know how it works out (you won't hurt my feelings if it doesn't).
